Chili Rellenos

Ingredients:

Crust:

  • 4 oz extra firm tofu.
  • 1 1/2 cup self-rising flower
  • 1/4 cup soy milk

Chili:

  • 3 pealed green chilis
  • 6 oz shreaded Vegan Gourmet Cheese Alternative - cheddar flavor

Directions:
Break up tofu with fork, add flour a little at a time, working into tofu. Add soy milk as needed augment the mix. Flour a cutting board and roll out 1/3 of dough as thin as practical. Split chili down one side and lay in the cheese. Close up the chili and fold over the dough and pinch the seam and ends closed. Preheat skillet and lay in relleno. Cook on all sides until golden brown. Smother with "chili con carne".
