Vegetable Soup Ingredients:
- 1 bell pepper
- 1 large potato
- 1 white onion
- 1/2 cup long grain brown rice
- 1/3 cup olive oil
- 1/2 Tofurky Italian Sausage
- 1 x 14.5 oz can S&W diced tomatoes
- 1 cup pine nuts
- 6 mushrooms
- 1/2 cup Bertolli Olive Oil & Garlic Sauce
- Three cups water
- 1 tsp salt
Directions:
Cook rice separately according to package directions and set aside. Chop bell pepper, potato,
white onion, mushrooms, and sausage into small pieces. Combine all ingredients but pine nuts and rice and simmer over medium heat until potato pieces
are soft. Salt to taste. Add pine nuts and simmer on low heat for five minutes. |
