Chicken & Dumplings

Ingredients:

Dumplings:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tablespoon sugar
  • 1/2 teaspoon garlic salt
  • 1/2 envelope Fleischmann'sŪ RapidRise Yeast
  • 3/4 cup very warm soy milk (120° - 130° F)
  • 1/4 cup olive oil

Broth, etc.:

  • 1 x 32 oz pkgs Swanson Vegetarian Vegetable Broth
  • 1 x 6 oz pkgs Lightlife Smart Strips Chick'n Strips
  • 4 mushrooms
  • A little black pepper

Directions:
Cut Chick'n Strips in half, lightly brown in olive oil and set aside. Chop mushrooms and set aside. Mix dumpling ingredients in large bowl. Heat soy milk to 125° F. Rollout dough on board to desired thickness. Cut into one-inch strips. Heat broth to boiling and break off one-inch squares of dough and drop into broth one at a time slowly to keep from sticking together. Pour in Chick'n Strips and mushrooms. Sprinkle in black pepper. Keep on slow bowl for 10-15 minutes.
